Ubriaco Al Prosecco

'Ubriaco' translates to 'the drunk' in Italian. Ubriaco Al Prosecco has been carefully infused with Prosecco wine after 4 months of aging. Sergio Moro and his team had to get special permission from the DOP (name protection body) to use Prosecco in the name of his cheese, an honor they don't bestow upon just anyone.

The resulting cheese has a crumbly texture with pops of tyrosine crystals throughout.  The flavor is fresh and bright, with tangy aromatics of apple and pear.
