About this item
Omorro Azores falls into the Torta (meaning ‘cake’) cheese family. Torta cheeses originate along the Spanish- Portuguese border. The outside rind of the cheese hardens as it ages, forming the perfect bowl for the soft, scoopable center. To serve, allow the cheese to sit out for twenty minutes to come to room temperature, then remove the top rind and spoon out the inner paste.
Omorro Azores is one of the few torta style cheeses to be made with cow’s milk (most others are made with sheep or goat). The cheese is made on the island of Faial, dotted with grassy meadows and windswept seaside cliffs. This adds a light minerality to the milk
