The mild flavor makes Fourme d’Ambert great to convert blue cheese skeptics. This cheese has a distinctly long, cylindrical shape with a bloomy rind and an earthy aroma. The paste is white with blue-green molding and a velvety texture with a distinctly earthy quality. The flavor is creamy and buttery, with a pleasant, delicate fruitiness. Fourme d’Ambert pairs well with Cotes du Rhone wine.
