La Dama Sagrada, or the Sacred Lady, is a rare gem in multiple ways. Women have been central to European cheesemaking for hundreds of years, but it is still rare to see a woman promoted to head cheesemaker in many European dairies. Fátima Navarro grew up in the cheese world and has over 24 years of experience in the industry. Her family helped found a dairy co-op in El Carpio de Tajo, which produces high quality Murcian goat’s milk. Fátima now serves as master cheesemaker of the co-op with Dama Sagrada as her piece de resistance.

Raw goat’s milk cheeses are quite uncommon in the United States, making this a unique addition to any cheese board.

The cheese is firm and snackable, with a bright acidity from the goat’s milk that balances out flavors of sweet hay and dried apricot. The crosshatched patten on the rind is typical of Castilla La Mancha style cheeses. It is meant to mimic the woven grass baskets originally used to make the cheese.
