Cree is our boots-on-the-ground, power tool welding, organizer of all things cheese. She runs a tight ship, ensuring that our three locations run safely and smoothly, bringing over 20 years of restaurant and management experience to the table. Cree joined the team in 2017, jumping at every opportunity to deepen her cheese education. She’s studied with food activists David Asher and Sandor Katz, toured creameries from Vermont’s Northeast Kingdom to the Swiss Alps, and competed in the 2018 Cheesemonger Invitational, winning “Best Beverage Pairing.”

Cree was born in the bosom of America's Heartland. Her dedication to sustainable agriculture started at a young age, raising goats and other livestock in small-town Ohio. She’s brought that with her to St. James, championing cheesemakers who use their craft to work in tandem with the rhythms of the earth. She spends most of her free time at a local water buffalo dairy.
