Named after the founder of Caws Cenarth, Thelma Adams who began producing this cheese in the 1980’s from a much older family recipe. It is a crumbly cow's milk cheese with a distinctive delicate lemony flavour. Its natural mould rind is mottled grey-white in colour and itself has an earthy, mineral flavour. Organic milk is sourced from within 30 miles of the dairy and from that the Caws Cenarth cheesemakers make cheeses that show their “terroir”, how the flavor of the product is affected by the rainfall, the sunshine and the coastal climate and all of the other factors that are specific to this part of South West Wales.
