 Buche de Fontenay is a textbook Loire Valley goat cheese, modeled off of the classic cheese St. Maure. Buche de Fontenay is rolled in vegetable ash, which was traditionally used to deter insects and pests as the cheese aged. In the modern era, the practice is preserved to create a striking contrast between the dark outer rind and bright white inner paste. 

The Loire Valley is the cradle of French goat cheese, with these ash-covered beauties coming in a variety of shapes and sizes. The cheese is fudgy and dense, with a lemony tang and peppery notes from the ashen rind. Buche de Fontenay is a French classic, and a must have for cheese boards. For a little extra flair, slices can be dipped in turbinado sugar and brûléed!
