Unctuous and meaty! We love this organic cheese hailing from the Pacific Northwest’s Cascadia Creamery. Made in Trout Lake Washington, Sawtooth wheels are formed from raw cow’s milk before being washed in brine, creating a wonderfully funky aroma. A clue it’s made with grass-fed milk: the paste has a beautiful golden tone that will stand out on any cheese plate. Never runny but always pudgey and fudgey in texture, this cheese makes a delightful pair with medium red wines, fruit, and cured meats.
