Porta Rocca is an Italian buffalo milk cheese  It has a beige rind and light straw colored paste with small eyes throughout. The buffalo milk provides richness and sweetness, with a mild milky flavor and light tang. After aging eight months, the cheese is slightly crumbly and develops some crunchy tyrosine crystals. 

Serve with grapes, hazelnuts, and a drizzle of cherry honey. Pairs well with a crisp white wine or witbier.
