Plus a jar of Casa Forcello Italian mostarda preserves which compliment the flavor of the cheese. Mostarda is traditional Italian condiment, made with candied fruit and a dose of potent mustard extract, balancing sweetness and heat.
Parmigiano Reggiano cheese is a product with the Protected Designation of Origin (PDO), made exclusively in Emiglia-Romana. Cheese produced according to the rules contained in the Production Regulation is the only cheese entitled to bear the Parmigiano Reggiano mark and, therefore, the wheel must display all the marks required for identifying and distinguishing the product.
Bertinelli Parmigiano Reggiano is made by one of the oldest family-owned Parmigiano producers in Italy. It has big richness and depth of flavor and tropical notes with a peppery arugula bite. It is aged about 26 months. Perfect for cooking, but also straight up with a glass of Lambrusco.
Parmigiano Reggiano Vacche Rosse is produced with the milk from Italian Vacche Rosse (red cow) cows. These are the original cows used to produce this legendary cheese. This one is aged for 30 months. The result is a cheese that, despite the long ageing, has a sweet, delicate and persistent taste.
Parmigiano Reggiano Vacca Bruna is produced from milk from the Vacca Bruna (brown cow) originally from Switzerland. The cows were brought to Italy in the 1800s to use for cheesemaking because of the high quality of their milk. The milk from the Brown Swiss cows has higher protein and casein contents than most other cow's milk. After aging for nearly 3 years, it still melts in your mouth and offers a sweeter, nuttier and almost toffee like taste because of the milk from this special breed of cow.
