Ossau-Iraty is produced in two regions in the southwest of France along the Spanish border—in the Northern Basque Country’s Irati beech forest and in Bearn’s neighboring Ossau Valley. The two places lie in the green rolling foothills of the Western Pyrenees, and they’re the namesake for the cheese. The rind is thick and crusty, enclosing a beautifully dense and surprisingly supple paste. It has a distinct lanolin aroma, with a concentrated flavor that balances fruity and nutty tones. A red wine from Bourdeaux is a great pair for this cheese, along with many well-rounded reds. 16 months of careful aging by affineur Rodolphe le Meunier ensure that this traditional raw sheep's milk cheese is golden, deeply savory and nutty - a true expression of both local terroir and centuries of Basque cheesemaking.
