Oma is a washed rind beauty, made by Sebastian von Trapp. The von Trapps have been dairy farming in Vermont for three generations, and Oma is named for the family matriarch, Erika. (Oma translates to ‘grandmother’ in German.)

Sebastian sends his fresh wheels to age for 2-3 months in the Jasper Hill Cellars. The resulting washed rind is funky but approachable, with notes of bacon, brown butter, and a distinct barnyard earthiness on the rind. The texture is supple and pudding-like, but never runny.

True to its monastic ancestors, Oma is rich and savory enough to stand up to tart pickles and cured meats (or replace meat entirely).  Use it to top a burger for the ultimate umami bomb. This is a favorite among our mongers for a reason!
