We love Jasper Hill Creamery in the Northeast Kingdom of Vermont. So we put together a selection of their wonderful cheeses for you to share with your nearest and dearest this Thanksgiving. Send it across the country, bring it to your Friendsgiving, or just eat it all yourself and give thanks for Jasper Hill.

Cabot Clothbound Cheddar is truly one of a kind. It is a Vermont-born collaboration between the cheese makers of Cabot Creamery and Cellars at Jasper Hill. Cabot Creamery is one of the state’s oldest farmer-owned cooperative creameries, established in 1919, and well-known for their American-style block cheddars. As the English farmhouse variation of cheddar is quite different, Cabot decided to team up with the cheese makers at Jasper Hill Farm when they undertook clothbound cheddar. We can all thank them for that! Their creation is a beautifully balanced sweet, salty, nutty and tangy cow’s milk cheddar. 

A medium strong and relatively dry blue cheese aged for 5 months, Bayley Hazen Blue delivers a complex flavor. The blue is upfront and slightly peppery, but the finish is long and creamy.This cheese works well with port and is best served as part of multi cheese course.
Bayley Hazen is named after an old military road that traverses the Northeast Kingdom.

Alpha Tolman is named for a philanthropic dairy farmer who built the Greensboro library in 1900.  Alpine cheeses like Appenzeller inspire the recipe for this Jasper Hill Creamery original. Alpha Tolman has a buttery, fruit & nut flavor when young, developing bold meaty, caramelized onion flavors as it matures. The texture is dense and pliant, easily portioned and ideal for melting. Its delicious melted onto a plate of fingerling potatoes, cured meat and sour pickles.
