Sourced from the aging rooms at Neal's Yard Dairy in London, Appleby's Cheshire is one of the finest English cheeses produced today. It is an ancient cheese, mentioned even in the Domesday Book. The Appleby family revived Cheshire cheesemaking after it was nearly wiped out by milk shortages during World War II. A tart, crumbly cheese with a milky, grassy scent, Cheshire is wonderful paired with fresh fruit and sweet accompaniments such as fruitcake. Pair it with a craft ale, or use it to make a traditional Welsh rarebit.
