Located in the Cadiz region of Spain, El Gazul makes cheese from its herd of 450 Payoya goats, an endangered breed that has recently benefited from efforts to protect it.
Montes de Alcala, made from organic milk, is made by hand and aged for 90 days for a firm texture. The paste is creamy, with clean flavors of citrus and fresh goat's milk. Before the cheese is packed, it is rubbed in pimenton for added depth of flavor.
