Speck, a lesser-known variation of prosciutto, is a sweet meat, deep, rich and earthy in texture with a distinct but light applewood-smoked flavor and aroma. Sliced thin to eat alone or with your favorite cheese. 

 The Heritage pork breeds used are Duroc, Lancaster and Berkshire, and have been raised by farmers that uphold strict animal husbandry standards: no antibiotics, all vegetarian feed, and raised on farms where they roam freely.
