Herb Eckhouse's Iowa made prosciutto is something special. Made from heritage breed Berkshire pork, only the ''culatello'' hind muscle is used, which means there is no bone and the meat is more delicate. The end product is sweeter than Italian Prosciutto, but does not have any musty characteristics.
To make the Prosciutto Piccante, Herb takes the Prosciutto Americano and rubs them down with a blend of fennel, sea salt, and red chilies that deepens the meat's earthy sweetness giving it a subtle heat.
