Judy Schad is a central figure in the history of American Goat Cheese. Along with other "goat ladies" Mary Keehn and Allison Hooper, Judy founded Capriole and began making goat cheese at before Americans knew how. Calling each other on the phone and becoming close friends, these three women stumbled through the pitfalls and came out the other side together, with incredible cheeses to show.  

Capriole Dairy's Julianna is a brie-like cheese made with goat's milk, its rind coated with herbs like rosemary and thyme, and calendula petals.  The cheese is silky in texture, and tastes so delicate you almost might not recognize it's made with goat milk. A wonderful emblem of Spring, and a wonderful converter for people just dipping their toes in the world of goat cheese.
