Did you know that charcuterie only refers to cured meat? The viral explosion of charcuterie boards in recent years has diluted the word to mean any assortment of prettily plated snacks. But here at St. James, we’ll be getting back to the basics. Exploring the history of meat preservation, from the 15th century Guild of Charcutiers to the origins of the infamous “gabagool”. 

We’ll be joined by Fra Mani Provisions, a California based charcutier that specializes in Italian style cured meats. Fra Mani focuses on environmentally sustainable practices, humanely raised meat, and quality products.  

This class will feature a flight of 5 meats, with a cheese pairing for each. A wine list will be offered a la carte. 

All charcuterie in this class is pork based, unfortunately we cannot offer non pork options.

Tickets Required:

You must have a pre-paid ticket to attend cheese class.  We do not accept last minute additions and walk-ins, as we plan seating and food and beverage amounts according to our reservation numbers.

Cancellation:

We have a 2- hour cancellation policy for reservations to receive a refund. We will not issue refunds or credits for ticket purchases for no shows to the classes. Please email molly@stjamescheese.com with any questions.
