When third-generation Master Cheesemaker Chris Roelli inherited his family’s Wisconsin creamery, he wanted to do something different. After learning that British cheddars were more desirable with a little blue mold in them, he decided to take this concept back home and perfect it, going on to develop two “Cheddar Blues”. His best-selling cheese, Dunbarton Blue is just that: a cheddar base, with a blue streak. For the cheddar lover or the blue lover, this cheese is firm and well-balanced, with a buttermilk tang, a bit of cheddar sharpness, chewy but creamy mouthfeel, and all the earthen-personality a little blue can bring. It’s the best of both worlds.
