Can we get a little…raw with you? Raw milk cheeses have had a bad rap, especially in the American dairy industry. However, in other parts of the world they are revered as the highest quality cheeses, with some countries legally requiring raw milk for certain cheeses (Comte, Gruyere, and Parmigiano Reggiano to name a few!).
We’ll be exploring the complicated debate of raw milk vs pasteurized, and the place that each has in the dairy industry. We’ll also be celebrating the unique flavors and microbial cultures of raw milk cheese. Join us as we dig into cheese in the raw!
This class will feature a flight of five raw milk cheeses and wine.

We cannot accommodate last minute additions and walk-ins, as we plan seating and food and beverage amounts according to our reservation numbers.
Due to space limitations, we cannot accommodate parties larger than 6. When purchasing tickets, please use the Comments section to list friends with whom you would like to sit.
