Comtè Extra-Aged Rodolphe Le Meunier

Made in Eastern France in the cooperative dairies, named fruitières, of the Jura Mountains. Comtè is a hard, pressed, cooked, cow's milk cheese made using raw cow's milk made from the Montbéliarde breed. It has similarities to Gruyere, with very deep, complex, long lasting flavor; always creamy, buttery, with notes of hazelnut.
These wheels of Comté arrive at Rodelphe Le Meunier Affineur in the Loire Valley, at about six months of age. They are then kept in the maturation tunnel where each week they are checked, turned and brushed by hand until they reach 36 months of age. The final product has a firm texture and complex nutty flavours with plenty of length. Comté is France’s most popular cheese and is the premiere cheese of the Jura region.
