Caspian is a Jasper Hill Farm original with its stylistic roots in the French region of Savoie. This cheese takes its name from Lake Caspian—Greensboro’s pristine glacial lake.

Caspian’s natural rind is kaleidoscope of cultures with mottling of white, gray, and brown flora with rosy undertones. Its concave sides signals a unique approach to the classic tomme-style, which achieves a dual-textured interior; a more friable center is enveloped by a thick, smooth creamline just beneath its rippled rind.

On the palate, Caspian presents a vibrant range of flavors. Its bright, lactic, herbaceous center evolves to cultured butter and mushrooms along the outer edges. Pair with a tart Gose to accentuate Caspian’s citrusy center or a Pinot Noir to complement the earthy notes.
