Monasteries have been producing their own goods since the middle ages to feed and sustain their communities of monks and nuns. Monastic cheese became a go-to as many in this community were unable to eat meat or fish due to religious reasons and cheese is high in protein. Typically, monastic cheeses are soft to semi-soft cow’s milk cheeses with pungent and aromatic flavors that develop as the wheels are washed in wine or beer.
As New Orleans continues is Lenten observance, this class will delve into the history and styles of monastic cheese, wine and beer. Join us on our journey as we taste our way through five pairings that embody monastic traditions.
