La Quercia Prosciutto Americano is bit sweeter than Italian prosciutto, and without the mustiness you sometimes find in it European cousin. It is made using Niman Ranch naturally raised pork. La Quercia was started in Iowa to create premium quality American prosciutto. Their ambition to create prosciutto came from their desire to take the bounty that surrounds them in Iowa to its highest expression. La Quercia seeks to contribute to the growth of premium artisan-made American foods by offering unique dry cured meats of the finest quality. Pack is approx. 3 oz.
Olympia Provisions Saucisson Sec (4.5 oz.) is a course-ground French style salami with black pepper and garlic. Olympia Provisions is a USDA approved charcuterie shop in Portland, Oregon. Their focus right now is all things pork! They butcher, cure, ferment, stuff, dry, cook and smoke almost every cut of the venerable pig. Olympia Provisions salamis are reminiscent of the handmade technique and authentic product one would find in a European farmer’s market.
