This is one of the true farmstead “Fermier” camemberts that available in the US. The milk is single sourced from the 150 head of cattle that live on the farm right next to where the cheese is made. The flavor is unique compared to most of the Camembert that you can find. It is packed full of rich, complex vegetal flavors, with notes of cauliflower and broccoli that compliment the buttery accents of the paste.
Camembert dates back to the 18th century and is named for a Norman village in which there is a statue of the creator Marie Harel. In 1855 one of Harel's daughters presented Napoleon with a piece of that cheese, saying that it came from village called Camembert. He loved it and from that moment on, Camembert became known by its current name. At the beginning of its ripening, Camembert is crumbly and soft and gets creamier over time (usually 2-3 weeks).
