This is a wonderful creamy blue sheep's milk cheese from the Auvergne in southern France. Produced by the Fromagerie de Laqueuille, this cheese is very similar to world famous Roquefort, but is noticeably less salty and firmer in texture. Being made with sheep's  milk lends the cheese a lighter and sweeter quality than cow's milk blues. Great all around snacking blue cheese but also great to cook with.

Nutritionally speaking, sheep's milk is very slightly richer in protein than cow's milk and contains more fat. But it differs mainly from its aromas typical to sheep's milk and the land on which they graze.
