Beaufort Chalet D'Alpage

Beaufort, though not as well-known as other mountain cheeses, is none-the-less one of France's finest creations. The "Alpage" version is part of a small subset of production, occurring exclusively from June to October in mountain chalets above 5,000 ft! Cows are grazed on the alpine pastures of the Vanoise National Park, and milk is collected out in the fields using mobile milking stations twice a day. This cheese was aged about 5 months in the chalet, and then moved to the Tunnel de la Collonge where it was lovingly aged for an additional year by the team from Mons Fromagerie. This time and care results in a stunningly complex and robust cheese, rich and flavor and texture, with lots of wild herbal notes. This is a once-a-year kind of cheese so grab some while it lasts!
