Inspired by Stracchino of Northern Italy, Banjo is ripened for a minimum of 7 days prior to sale. With a texture that is soft & smooth, Banjo is mild and buttery with a slight lactic tartness. As the cheese continues to ripen over the next two weeks the texture becomes more supple and spreadable. With excellent melting ability, Banjo is a versatile cheese in the kitchen.  Try it on pizza, salads, sandwiches and more!

Banjo is made by Hobo Cheese, a microcreamery located just outside of Atlanta, GA. owned and operated by Megan and Tyler Davis, their goal is not just to produce great cheese from the South, but great cheese of the South.
