Cabot Clothbound Cheddar is truly one of a kind. It is a Vermont-born collaboration between the cheese makers of Cabot Creamery and Cellars at Jasper Hill. Cabot Creamery is one of the state’s oldest farmer-owned cooperative creameries, established in 1919, and well-known for their American-style block cheddars. As the English farmhouse variation of cheddar is quite different, Cabot decided to team up with the cheese makers at Jasper Hill Farm when they undertook clothbound cheddar. We can all thank them for that! Their creation is a beautifully balanced sweet, salty, nutty and tangy cow’s milk cheddar. When snacking on this crumbly masterpiece, you will enjoy the occasional flavor crystal. Because the cheese is aged by wrapping it in bandages that are painted with lard, the flavor increases as you approach the rind. Eat Cabot Clothbound Cheddar with chutney and hearty bread, or pair it with a dark beer or cider.
