Tomme de Savoie is a rustic, raw cow’s milk cheese displaying a bouncy, pliant texture and taste of milk, hay, earth and nuts. This is a farmhouse cheese - meaning the milk of one herd of animals is used to make the cheese on-site at the farm. Aged approximately 10 weeks, this representation of the Savoie was traditionally made from milk leftover from producing larger, more popular cheeses. However, this humble little farmer’s cheese has made a place in history of its own, becoming an AOC protected cheese in 1992.
