Judy Shad and her husband Larry founded Capriole Farms in 1978, as part the bigger American artisan cheese renaissance. In the late 1970s and early 80s, we saw daring dairy farmers educating the American public on cheeses beyond the simple block cheddar, including soft ripened goat cheese.

Piper is named for Judy’s redheaded granddaughter. The curds are carefully hand ladled into their molds and laced with just a touch of smoked paprika. Velvety, clean, and bright, with a gooey cream line near the rind.
