From German cheesemaker Albert Kraus comes this toasty cheese, called Rampe Kase in Germany, chock full of wild Bavarian ramps. Within one cheese are notes of wild onion and garlic, nuttiness and a sweetly herbal profile. Ramps are a highly prized wild leek that are foraged seasonally in the mountains of Bavaria. Aged for four months, this prized cheese is springy, with grassy undertones resulting from the pastures where the cows graze. Pairs beautifully with hot savory foods and a glass of bold red wine.
